LEMON RICE
Lemon rice is one of the common South Indian rice dishes. The word Lemon Rice can imagine the freshness of lemon along with south Indian tadka. It tastes so amazing. It is a quick rice recipe and very easy to make with your leftover rice A perfect flavoured rice, enhanced with distinct flavour and sourness of lemon and south Indian tadka curry leaves, mustard seeds, red chilli and Bengal gram. Lemon rice goes very well with yoghurt, raita, chutney, and salad. Add some pappadums to give a crunch to your meal.
It can be made with freshly boiled rice or with leftover rice. But I recommend you to prepare it with leftover rice or at least boil rice 2-3 hours in advance. The Bengal gram gives crunch to this sour and aromatic rice. Added lemon rind to this lemon rice gives the fresh aroma and a distinct flavour. The lemony yellow colour makes your taste buds tingle as soon as you see it.
South Indian lemon rice is similar to Chinese fried rice. Fried rice is prepared with sauteed vegetables with some sauces and south Indian lemon rice is prepared with lemon along with south Indian tadka of curry leaves, mustard seeds, red chilli and etc.

- 2 cup Rice boiled
- 1/2 tsp Lemon rind
- 1 tsp lemon juice
- 8-9 no Curry leaves
- 1/2 tsp Mustard seeds
- 1 tsp Bengal gram
- 1/2 tsp Split black gram
- To taste Salt
- 1/4 tsp Turmeric powder
- 1/2 tbsp Oil
- Heat oil in a pan.
- Add mustard seeds, bengal gram, split black gram and curry leaves.
- Now add boiled rice, salt, turmeric powder, lemon juice and rind. Mix well.
- Ready to serve.
