Salan

Salan is prepared with yogurt, sesame seeds and nuts. It is generally yellow in color.

Salan is basically belongs to Hyderabad. Salan must have turmeric and curry leaves in it. There are some famous varieties of it like- mirchi ka salan, machli ka salan and bagara baingan.

  1. Dry roast the sesame seeds, poppy seeds, peanuts,coconut, coriander seeds, cumin seeds, black peppercorns and whole red chilies. Make a paste with water.
  2. Heat oil in heavy bottom pan, add mustard seeds, bay leaf and clove, when crackling add curry leaves.
  3. Add ginger garlic paste suate for 30 seconds.
  4. Add spices salt turmeric powderand red chilly powder,then add the salan paste cook for 5 minuts.
  5. Remove the pan to prevent curdling , add yogurt.
  6. Return to heat, cook it till starts leaving oil.
