White Gravy

White gravy is creamy base used for special preparations. White gravy is made from boiled onion paste and nuts, finished with cardamom and mace powder. It is generally used as a base for shahi recipes like- shahi paneer, Malai Kofta, Methi Mutter Malai and that famous Rajasthani royal dish, Safed Maas. Shahi means royal and it is because of the use of nuts in it. The famous kormas are also a derivative of white gravy.

  1. Peel and cut the onion into quarters and boil them along with cashew nuts, poppy seeds and magaz till cashew nut become soft.
  2. Make a smooth white paste with the boiled things.
  3. Heat oil in a handi; add whole garam masala and sauté until it begins to crackle.
  4. Add the ginger garlic paste sauté for 30 seconds. Then add the white paste sauté for 2 minutes and add white pepper & salt.
  5. Add a little water around 150 ml and cook it till starts leaving oil.
  6. Finish it with cream and cardamom & mace powder.
